Chicken Stir Fry
I cook this meal with a wok
Ingredients
4 Boneless Skinless Chicken Breast (marinaded)
1 green pepper (cut julienne style)
1 red pepper (cut julienne style)
1 yellow pepper (cut julienne style)
1 orange pepper (cut julienne style)
1/2 onion sliced
1 small can watercress
2 handfuls fresh snap peas
Marinade
extra virgin olive oil
1-2 cloves crushed garlic
2-4 T ginger root grated
choice of prepared marinade
I usually marinade the chicken the night before or at the beginning of the day. I put the chicken breast in a 9x12 pan and make sure marinade covers the chicken. I use 3 parts evoo to 1 part already prepared or store bought marinade.
Directions
Cut chicken into strips. cook in wok with marinade, about 20 minutes covered. Take chicken out, put in veggies, add evoo and more crushed garlic as needed. Cook veges covered about 15 mins. Combine chicken with veges continue cooking for another 5-10 minutes.
I always serve this with brown rice.
